Creamy Tuna Casserole Recipe

We love this tuna casserole- it comes from the Better Homes and Gardens New Cookbook (aka. the Cooking Bible) originally but I have made quite a few changes to it over the years to try to get it perfectly creamy and delicious.

Tuna Noodle Casserole

  • 6 Cups or a 1 Pound Bag of Egg Noodles
  • 1/4 – 1/2 Cup Chopped Onion (Can use Dried)
  • 1/2 Cup Butter
  • 1/2 Cup Flour
  • 1 teaspoon Salt
  • 1 1/2 teaspoons Mustard (1 t. if using dry mustard)
  • 1/2 teaspoon black pepper
  • 2 Cups Milk
  • 1-2 Cans of Tuna
  • 1 Cup Cheddar Cheese (optional)
  • 3 Tablespoons Butter
  • 3 Slices Bread, torn into small crumbs
  1. Cook and drain noodles. Melt butter in saucepan, and cook the onions in it for a few minutes.
  2. Stir in flour, salt, mustard and pepper.
  3. Add milk all at once; cook and stir until thickened and bubbly. Mix sauce with noodles, tuna, and cheese. Spread the mixture in a casserole dish.
  4. Melt 3 Tablespoons of butter in the microwave and mix with bread crumbs, sprinkle it on the top of the casserole.
  5. Bake at 350 degrees for 20 minutes, or until bread topping is crisp and crunchy.

Chicken Ranch Lunch Wraps

Homemade Chicken Ranch Snack Wraps

My husband loves eating snack wraps from a certain fast food place, but oftentimes they are small and two of them is just a snack- and a pricey snack at that! Sometimes I make him homemade snack wraps but I don’t like to call them snack wraps, because mine are bigger and much more filling! Instead, we call them Chicken Ranch Lunch Wraps.

  • Tortilla
  • Ranch Dressing
  • Lettuce
  • Chicken Nuggets or Breaded Chicken Patties (Cooked and Cooled)
  • Shredded Cheese
  1. Put a large spoonful of ranch on the tortilla, spread it around so that every bite will have some ranch in it.
  2. Lay out your lettuce so that it covers the ranch, and lay the chicken down.
  3. Sprinkle with cheese, then wrap. Hold wrap together with a toothpick if needed.

Chicken Snack Wraps

A couple of these snack wraps make a great lunch- it’s tasty enough that my husband won’t go out and buy something instead! If I can make him great lunches at home it saves us alot of money on going out to eat, plus it’s a tiny bit healthier than what you would buy at a restaurant.

4 Make Ahead Breakfast Ideas for Future Busy Days

Yesterday when I went grocery shopping I had alot of ambition for cooking this week. I went home and prepared what I could for this week’s lunches, and wrote up this week’s meal plan. Hopefully because it’s pretty easy (and written down!) I can stick to it. Do you use a meal plan and actually stick to it?

4 Make Ahead Breakfast Ideas for Future Busy Days

When I’m not feeling sickly for months at a time (stupid morning sickness!) I try to make breakfast on the weekend atleast a couple times a month. On days where I have a little extra time I make a big breakfast with plenty of leftovers that I can freeze for later. This has been a huge help now that I don’t feel like doing anything, other than the fact that we are running out of almost everything!


Strawberry Muffins

I love freezing muffins because no one in my house really appreciates muffins as much as I do and if I freeze them they won’t go to waste!

Freezing Method: Just put them in a Zip-Lock bag and Freeze!

Reheating Method: Microwave for about 30 Seconds each

Breakfast Burritos

We love making breakfast burritos, but we are stuck just making our favorite- Bacon, Egg and Cheese. My grandfather is the king of breakfast burritos, he makes a mix of ‘breakfast burrito stuff’ and eats it for breakfast everyday for days on end. His burritos are different every time, he uses whatever ingredients he has on hand. One of his main ingredients is potato chunks.

Freezing Method: Lay finished burritos on a cookie sheet or flat surface and freeze for an hour or two. After that time transfer the burritos to a Ziplock bag.

Reheating Method: Microwave for 2-3 minutes, until heated throughly

  • Package of Bacon
  • Dozen Eggs
  • 10 Burrito Size Tortillas
  • Cheese
  1. Cook the bacon and Scramble the Eggs. Season the eggs to taste while cooking. Crumble bacon into small pieces and mix with eggs. Set Eggs and Bacon aside.
  2. Cook tortillas on the pan that the bacon was cooked in, just for 30 seconds-1 minute on each side.
  3. Put a few spoonfuls of egg and bacon mix into the center of the tortilla and sprinkle a generous amount of cheese on top.
  4. Fold the burrito closed, and enjoy!



Pancakes with Apple Topping

We love pancakes here. Not only are they super easy to make, it is easy to make a huge batch (especially if you have a huge skillet) and be able to eat them whenever you want afterwards!

Freezing Method: Lay flat for 30 minutes in the freezer, then transfer to a ziplock bag. Refrigerate extras until you have time to freeze all of the pancakes.

Reheating Method: Microwave for 30 seconds for each pancake.


Hot Pockets

I love making hot pockets, but I also take the time to make my own dough. Making the dough is super time consuming so I don’t make these very often. If you buy premade cresent rolls dough or puff pastry it can be a really easy breakfast to make and freeze for later. My husband loves eating these because they don’t take long in the microwave and taste delicious. There are better instructions on my Berry Recipes post- go check that out for the full details. What I didn’t list over there (because I just did berry ones that time) was the many other combinations of what we put in them.

15 Minute Suppers: Italian Chicken Pasta

This Italian Chicken Pasta is a meal that I make on nights before we go anywhere- whether it’s work, school or road trips it taste great the first night when it’s warm but even better the next day after being chilled. It’s easy to throw into a lunch box with some ice packs.

15 Minute Supper: Italian Chicken Pasta
Recipe Type: Dinner

  • Jarred Minced Garlic(Optional)
  • Oil(Optional, goes with garlic)
  • Italian Salad Dressing
  • Noodles (I usually use thin spaghetti but this time I am using rotini)
  • Shredded Chicken (Canned, Frozen or Leftover)
  1. Cook and drain your noodles.
  2. Heat oil in the same pan that you cooked your noodles in, and cook garlic in it for a few minutes. Toss in Italian Dressing and shredded chicken. Let it cook for a few more minutes and then add the noodles and stir everything in until it is well mixed. Serve hot or let it cool and refrigerate, then it can be served cold.

12+ Dinner Ideas Using Leftover Turkey
Thanksgiving is just two weeks away! Need ideas to use your leftover turkey in? Well I have plenty of ideas! I usually buy a second turkey to cook another time just so that I have the leftovers, a turkey around Thanksgiving is usually the cheapest meat per ounce you can buy. My basic idea is that I can use turkey instead of chicken for almost any recipe. Instead of “Winner, winner chicken dinner” we’re saying “Winner, winner turkey dinner”!

Salads are always better with some tuna or chicken shredded on them, so why not try turkey instead. The same goes for a chicken salad sandwich, just make it a turkey salad sandwich.
I love casseroles as long as they are super moist and creamy. You could make up your own casserole by using some noodles, turkey and cream of chicken soup and whatever else you want to add. With some interesting spices it can be a great combination!

Turkey and Noodles

This is a family favorite of turkey noodle soup. Usually it doesn’t come out soupy so we just call it Turkey and Noodles. It is delicious, and a great way to warm up on a cold day.

Ever had a Barbecue Chicken Pizza? They are amazing, especially the way I make them! If you want to take the easy road, they sell pizza dough already made in a can. All you have to do is roll it out and add your own toppings. It’s personalized and takes about the same time as delivery.

Turkey and Broccoli Alfredo
This recipe is the one on this list that I haven’t tried yet. I saw it on Pinterest and I had to add it to this list. I love making Alfredo because I usually buy jarred sauce but I never thought of adding turkey and broccoli to it. It sounds delicious!

Turkey Sandwiches
There’s the classic After Thanksgiving Sandwich, usually made with all the leftovers but to mix it up some you could try making a BBQ Turkey Sandwich (I make mine like a pulled pork sandwich) or you could try a Turkey Salad Sandwich.

My husband loves our version of Cajun Chicken Alfredo. When we make it with pre-cooked chicken or turkey we just add the Cajun seasoning to the alfredo sauce. This is a delicious and easy way to use some of your leftover turkey and have a quick meal!


Turkey Tacos or Burritos
We love making burritos, and every once in awhile we will make tacos instead. I know turkey tacos sounds like the weirdest thing ever, but you can hardly tell that it’s turkey instead of chicken, especially if it’s seasoned with taco seasoning. Try our 15 Minute Burrito Mix Recipe with Cilantro Rice– with everything else in it you definitely can’t tell that it’s turkey instead of chicken.

Turkey a la King
This is such an easy recipe that it’s a must after thanksgiving. It’s a great thick sauce that you serve over toast. I’ve even made it to where I will sneak in more vegetables and it’s still delicious! Click here to see my healthy version. My mother-in-law makes another recipe that she and my husband say is close to this one (I think it tastes totally different) but they call it Open Faced Turkey Sandwiches. It’s a mixture of shredded turkey and gravy as a sauce, served over toast as well.

This pasta is great with or without meat, but a little shredded turkey would make it that much more delicious. The pasta is great when it is first made and warm but it is also amazing chilled. It’s a great meal to take in a lunch box whether you are traveling or just going to work.

15 Minute Cheesy Turkey and Rice

We love this easy dinner of Cheesy Turkey and Rice- it can be made in about 15 minutes and always tastes delicious! Not to mention that it is relatively cheap to make as well! We actually eat some form of Chicken and Rice a couple times a month here. We just had it this last week and my husband is already asking for it again! I guess I should have made a bigger batch so that he would have some leftovers.

Maple Syrup- One of the Four Main Food Groups!

We love syrup around our house- especially homemade! This year I will be decorating some of my hoarded jars for some of our neighbor gifts. It’s a nice gift because I already know they like it, and it is something that can be tucked in the fridge and used at any time. I might even include a bag of frozen pancakes with it as well.

Maple Syrup

  • 1 Cup light corn syrup
  • ½ Cup brown sugar
  • ½ Cup of water
  • Dash maple flavor
  • 1 Tbs. butter or margarine
  1. Combine syrup, brown sugar and water. Cook on the stove on low heat and stir until the sugar is dissolved. Stir in flavoring and butter. It can be served hot off the stove, or after being refrigerated.

I had an empty bottle that was from olive oil- washed out it was a perfect bottle to give away some syrup in. For ourselves, I just use a water bottle that we were able to get for free from one of our utility companies. It works perfectly! I know my mom uses a gravy dish and in the past I have used a large glass measuring cup to hold my maple syrup too. There are so many options and cute ways to hold it.

15 Minute Suppers: Cajun Chicken Alfredo

One of our favorite local restaurants, Uncle Bear’s, makes a great Cajun Chicken Alfredo. When I was trying to copy it one night I found a great way to have an easy but delicious dinner- and it can be made in 15 minutes!

Cajun Chicken Alfredo

15 Minute Suppers: Cajun Chicken Alfredo

  • 1 Jar Alfredo Sauce (dry packets are also easy)
  • 1/3 C Bella Sun Luci Sun Dried Tomatoes (optional)
  • Linguine Noodles
  • Raw Chicken Breast
  • Cajun Seasoning
  • Grated Parmesan
  1. First start boiling a bowl of water for your noodles. I add a little salt to keep the noodles from sticking and to help the water come to a boil quicker. Once you hear the water boiling make sure you add your noodles. When they are done cooking you can drain them as well.
  2. Switch modes while your water is boiling and cut up your chicken into thinner slices. This will help it cook faster, and allow the seasoning to cover more area. Once the chicken is cut, cover as much of it as you can with the cajun seasoning. Cook the chicken on ‘the george’ as we call it, or on a skillet.
  3. While both the chicken and the noodles are cooking you can get the sauce ready. This is the easiest part as you are really just heating it up. Put the sauce in the pot and cook it on medium. Also add your sun dried tomatoes.
  4. Once your noodles and chicken are done cooking you can put everything together. Put the drained noodles on your plate and add some sauce. You can also put a couple pieces of chicken on your plate and sprinkle everything with some Parmesan Cheese.

We have a small family, so this is enough for us. For bigger families it is easy to double, triple or quadruple the recipe. It shouldn’t take too much longer. There you have it, a delicious dinner in 15 minutes. Try it tonight!

Chocolate Zucchini Muffins

I love a nice chocolaty treat that also has some vegetables in it! These muffins are great to make and freeze for a snack later too. My son loves to eat them too- he thinks he’s eating chocolate cupcakes! They really could be made without the topping and be frosted! My husband likes them without the topping too. The original recipe is Chocolate Zucchini Cake from Something Edible, but I do mine a little differently!

Chocolate Zucchini Muffins

  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup cocoa powder
  • 2 cups all-purpose flour
  • 4 cups grated zucchini
  • 1 cup chopped nuts (pecan or walnuts are great!)
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup light brown sugar
  1. Preheat oven to 350º
  2. Mix butter and sugar. Add eggs and vanilla. Mix thoroughly.
  3. Add salt, baking soda, and cocoa. Slowly add flour.
  4. Mix in the grated zucchini.
  5. Pour into greased muffins tins or paper baking cups.
  6. Mix the brown sugar, pecans and chocolate chips and sprinkle on top of the muffins.
  7. Bake for 18-25 minutes or until a toothpick comes out clean.

Powder Your Own Sugar { DIY Powdered Sugar }

This post might be common sense to everyone else, but once I realized that you could turn sugar into powdered sugar at home I felt disappointed that I had gone to the store on more than one occasion to go buy powdered sugar.

To do this you need a wheat grinder or a blender. I have a fancy blendtec that I use for it and I’m not sure if a regular blender would work. If it works for you, please let me know!

Blendtec Directions:
Put about 1 1/2C of Sugar into the blender. Blend on Speed 5 for about 20 seconds. When it stops, use a spatula to make sure the sides and corners are being ground as well. They usually are, but with powdered sugar I don’t take a chance. Blend for another 20 seconds and then test the sugar to see how grainy it is. I usually grab a small amount and rub it between my fingers. If it feels coarse at all, then blend for another 20 seconds. Keep testing it and reblending it until it is fine and soft.

For a wheat grinder, follow the directions you use for grinding wheat but test the powdered sugar every so often to see how soft it is. I usually need powdered sugar for frosting and I don’t want gritty frosting, so I take every effort to make sure its perfect. I have never seen my powdered sugar be over-powdered so I guess it’s ok!
