15 Minute Supper: Chicken Parmesan

Super Easy Chicken Parmesan #15MinuteSuppers

This is one of our favorite dinners, but I had forgotten about it until recently. At first I called it Redneck Chicken Parm, because I felt totally cheesy for making Chicken Parmesan with microwaved chicken patties. Now I realize that it’s just genius. And delicious. Plus, who can go wrong with a delicious meal in 15 minutes?

15 Minute Supper: Chicken Parmesan

Ingredients
  • 3 Cups Pasta
  • 4 Cups Tomato Sauce
  • 1/2 teaspoon Basil
  • 1/2 teaspoon Oregano
  • 1/2 teaspoon Garlic
  • 1 1/2 teaspoon Italian Seasoning
  • 1/2 teaspoon Montreal Chicken Seasoning
  • 1/2 teaspoon Sugar
  • 5 Chicken Patties
  • Parmesan Cheese
Instructions
  1. Cook your noodles, just as you normally would. The noodles take the longest so start them first.
  2. In a separate pot start your spaghetti sauce. Add the tomato sauce and all of the spices, and let it cook until the noodles are ready.
  3. Heat up your chicken patties in the microwave. After they are mostly heated, pop them in the oven on broil for a minute or two for each side. This just helps make them a little crispy and much tastier!
  4. When everything is finished cooking, dish it and serve it with plenty of Parmesan on top!
  5. If you are storing leftovers afterwards, store the chicken separately so that it doesn’t get too soggy.

15 Minute Supper: Burrito Mix with Gourmet Gardens Giveaway

15 Minute Burrito Mix with Gourmet Garden Spices #15MinuteSuppers

There are four main things that go in our Burrito Mix: Beans, Rice, Chicken, and Salsa. We also use cheese as a topping.

Beans and Salsa

Beans and Salsa are usually the easiest parts of our burrito mix. I use canned beans, usually Great Northern Beans or Pinto Beans. I used to have to kind of smash the beans up so that my husband would eat them, but luckily after a few years of eating this he is used to eating beans now.

Usually I use store bought salsa, but I didn’t know that we were out of it until I had already started everything else- so this time I made my own salsa as well. If you are quick with chopping it could be done in the 15 Minutes as well. It took me quite a bit longer because of my little helper in the background.

 #15MinuteSuppersMy salsa doesn’t look the prettiest, and I’m not even going to give you a recipe because it was mostly just stuff I happened to have around the house- tomatoes, frozen peppers, frozen onions, as well as the spices from Gourmet Garden- Cilantro and Chili Pepper. I chopped and threw all of that together and blended it in the blender. We used approximately one cup of salsa for the burrito mix.

Chicken

 #15MinuteSuppersThe chicken is another pretty easy ingredient- leftovers from earlier in the week. We had grilled chicken with Montreal Steak Seasoning earlier in the week, and it went perfectly with the rest of the burrito mix.

I used about one chicken breast and shredded it in the blender- it took approximately 10-15 seconds. More chicken is always better in our house though!

Rice

Cilantro Rice #15MinuteSuppersThe rice is the most time consuming so be sure to start making it first. The rice itself is very tasty and would be a great side dish to any type of Mexican food or otherwise! I used the Gourmet Gardens Lemon Grass and Cilantro this time- it turned out amazing and reminded me of Chipotle’s Rice that I have been craving.

Ingredients
  • 1 Cup Dry Rice
  • 2 1/3 Cups Water
  • 2 Tablespoons Olive Oil
  • 1/2 teaspoon Taco Seasoning
  • 1/2 teaspoon Gourmet Gardens Lemon Grass
  • 1/2 teaspoon Gourmet Gardens Cilantro
Instructions
  1. Add the rice, water, olive oil, taco seasoning and Lemon Grass to a small pot. Heat on high until boiling. Reduce heat to medium, so that it is still boiling.
  2. When there is hardly any water left, add the Cilantro and let the rice continue cooking for a minute or two. Now the rice should be ready to add to the rest of the burrito mix. (Or dished up as a side dish to something else)

Mixing the Burrito Mix

Once everything is ready, all that needs to be done is to mix the burrito mix together. We prefer a mix, because it makes for easy lunches for the next couple of days and it tastes so much better to have everything mixed in.

Burrito Mix in a too-small bowl #15MinuteSuppersSo I’ve already mentioned it above, but we use 1 can of beans, 1 cup of mild salsa, 3(ish) cups of rice and 3(ish) cups of shredded chicken. I have been meaning to get a bowl back from a neighbor- but I tried putting everything in a smaller one. Needless to say, it didn’t work. I just wanted to explain why the burrito mix was put into a Christmas bowl for awhile.

After everything is mixed, it can be dished onto a tortilla. We then will sprinkle cheese on top, and sometimes add more salsa. If you need to melt the cheese or heat up the burrito make sure to heat it up before folding it.

That’s it! All of this can be done in 15 minutes and you will have a delicious dinner for your family! Everyone in my family loves this dinner- especially my two year old son (as long as he doesn’t eat all of the ingredients before they are put together- he must have drank a 1/2 Cup of Salsa this time!).

Creamy Tuna Casserole Recipe

We love this tuna casserole- it comes from the Better Homes and Gardens New Cookbook (aka. the Cooking Bible) originally but I have made quite a few changes to it over the years to try to get it perfectly creamy and delicious.

Tuna Noodle Casserole

Ingredients
  • 6 Cups or a 1 Pound Bag of Egg Noodles
  • 1/4 – 1/2 Cup Chopped Onion (Can use Dried)
  • 1/2 Cup Butter
  • 1/2 Cup Flour
  • 1 teaspoon Salt
  • 1 1/2 teaspoons Mustard (1 t. if using dry mustard)
  • 1/2 teaspoon black pepper
  • 2 Cups Milk
  • 1-2 Cans of Tuna
  • 1 Cup Cheddar Cheese (optional)
  • 3 Tablespoons Butter
  • 3 Slices Bread, torn into small crumbs
Instructions
  1. Cook and drain noodles. Melt butter in saucepan, and cook the onions in it for a few minutes.
  2. Stir in flour, salt, mustard and pepper.
  3. Add milk all at once; cook and stir until thickened and bubbly. Mix sauce with noodles, tuna, and cheese. Spread the mixture in a casserole dish.
  4. Melt 3 Tablespoons of butter in the microwave and mix with bread crumbs, sprinkle it on the top of the casserole.
  5. Bake at 350 degrees for 20 minutes, or until bread topping is crisp and crunchy.

Green Chile Chicken Soup

Slow Cooked Green Chile Chicken Soup

This Green Chile Chicken Soup is so delicious you will be licking your bowl clean- literally! Calling it a soup is a new thing for us though- we got the recipe from our friend and we have always called it “Green Chile Chicken Stuff” and we would either eat it in a tortilla like a burrito or out of a bowl as a soup. I like eating it as a soup the best, sometimes I would even dip tortillas in it as well.

Ingredients
  • 5 Large Chicken Breasts
  • 1 tsp Garlic Salt
  • 1 tsp Onion Powder
  • 1/2 tsp Pepper
  • 1/4 Cup Diced Onions (Optional)
  • 1 Large Can of Green Enchilada Sauce
  • 1 Large Can of Diced Green Chiles
  • 2 Cups (2 Boxes) of Cream Cheese
  • 4 Cups (2 16oz Tubs) of Sour Cream
Instructions
  1. Season the chicken with the garlic, onion powder and pepper. Put the chicken and the onions in the slow cooker on high for about 3 hours or until the chicken is cooked.
  2. After the chicken is cooked, shred it. Add the remaining ingredients to the crockpot and mix them well. Let cook a couple hours until everything is heated thoroughly or longer.

15 Minute Supper: Classic Chicken a la King

This recipe originally came from my favorite cookbook (aka: the bible) but in more recent editions the recipe hasn’t been included. I found this out after frantically calling my mom and comparing page numbers at the last minute one night before finishing up dinner as a newlywed. Since then I have countless scraps of paper reminding me of the recipe and I have come up with a few additions to our Chicken a la King recipe that add a bit more flavor.

15 Minute Supper: Classic Chicken a la King

Ingredients
  • 6 Tablespoons Butter
  • 1/4 Cup Chopped Onions
  • 1/2 Cup Flour
  • 3/4 teaspoons Salt
  • 1/8 teaspoons Pepper
  • 2 Cups Milk
  • 1 Cup Water
  • 1 Chicken Bullion Cube
  • 1/8 teaspoon Montreal Chicken Seasoning (optional)
  • 2 Cups Chicken
  • 1 Can Mushroom (optional, from original recipe but I never add them)
  • Toast (can substitute with noodles, rice, etc.)
Instructions
  1. Melt the butter and add the onions, let them saute for a few minutes.
  2. Add the rest of the ingredients minus the chicken and mushrooms and cook on medium heat until thick and bubbly.
  3. Add chicken and mushrooms until heated.
  4. Serve over toast.

15 Minute Supper: Spicy Sausage and Tots

15 Minute Sausage and Tots

This dinner is so simple and easy it really doesn’t need a recipe. After making it millions of times it has become a serious staple in our dinners at home but it’s something that not everyone would think of making. I have to thank my mother-in-law and husband for coming up with this idea. We might starve without it some nights!

I also have to mention that it takes way less than 15 Minutes to make this, it took me about 7 minutes today but I had my sausage already chopped up from yesterday. We ate this last night and there weren’t any leftovers so I had to make a second batch today.

15 Minute Supper: Spicy Sausage and Tots

Ingredients
  • 4 Spicy Hot Smoked Sausages
  • 3 Cups Frozen Tater Tots
  • 1/2 Tablespoon Montreal Steak Seasoning
  • Olive Oil Spray (Or another oil)
Instructions
  1. First spray your skillet with the olive oil spray and let it heat up.
  2. While your pan is heating up, slice your hot sausage.
  3. Put your sliced sausage on the skillet, on medium heat.
  4. While the sausage is cooking, defrost the tater tots in the microwave. I usually will just microwave them on normal heat for 1-3 minutes.
  5. Move the sausage to one side of the pan. While doing so try to make sure that they are all flipped over so that they can cook evenly. They will cook until slightly blackened.
  6. Add your defrosted tater tots to the skillet. Roughly chop them up with your spatula and add the steak seasoning to them. Mix them and let them cook until they start to turn golden brown and a little crunchy.
  7. The sausage and tots should both be done cooking around the same time, if not either one should be fine if it cooks a little extra. They can be mixed up before being served (or even while they finish cooking).

The best part of this recipe comes from the ingredients- usually I am one to buy generic brands but not with these things- the Hot Smoked Sausage Links are from Bar-S and the Montreal Steak Seasoning is by McCormick. I’m not paid to advertise these brands, but I should be!

Cooking Sausage and Tots

I love that we can make this with just a few dishes too- I tend to slice up the entire bag of sausage the first night we cook it and freeze it so that it’s even easier to make the next time. Sometimes I get crazy and put them in single portion sizes with the tots so that if hubby or I want an easy lunch its right there and easy to make (and tons cheaper than a tv dinner).

15 Minute Supper: Cheesy Turkey and Rice

Cheesy Turkey and Rice #15MinuteSuppers

I wish I could remember where I got the idea for making Turkey Broccoli and Rice. I know I started making it when my husband and I first got together- it might have been one of those times I just found random ingredients in the pantry and put it all together. It’s something that we make on a regular basis because it’s so easy and filling. Not to mention tasty!

We love to make this with either leftover Chicken or Turkey (I usually freeze them 1 Cup portions) or canned chicken or sometimes we will cook a chicken breast on “the George” while the rice is cooking. During this next month or so I’m sure we will be making it with leftover Turkey from Thanksgiving! (See Also: 12+ Dinner Ideas from Leftover Turkey)

15 Minute Supper: Cheesy Turkey and Rice

Ingredients
  • 1 Cup Rice
  • 3 Cup Water
  • 3/4 Cup Frozen Broccoli
  • 1/2 Tablespoon Montreal Steak Seasoning
  • 3/4 Cup Cooked Chicken or Turkey
  • 1 Can Cream of Chicken (or other “cream of”)
  • 1/2 Cup Shredded Cheddar Cheese (plus extra to add on top, if desired)
Instructions
  1. Add the rice, water, broccoli, and seasoning to a pot, heat on high until boiling, then reduce heat to medium. When the water is semi-reduced add the cream of chicken, cooked chicken and cheese. Mix everything in and let the rice continue cooking for the full 15 minutes.

This Italian Chicken Pasta is a meal that I make on nights before we go anywhere- whether it’s work, school or road trips it taste great the first night when it’s warm but even better the next day after being chilled. It’s easy to throw into a lunch box with some ice packs.

Ingredients
  • Jarred Minced Garlic(Optional)
  • Oil(Optional, goes with garlic)
  • Italian Salad Dressing
  • Noodles (I usually use thin spaghetti but this time I am using rotini)
  • Shredded Chicken (Canned, Frozen or Leftover)
Instructions
  1. Cook and drain your noodles.
  2. Heat oil in the same pan that you cooked your noodles in, and cook garlic in it for a few minutes. Toss in Italian Dressing and shredded chicken. Let it cook for a few more minutes and then add the noodles and stir everything in until it is well mixed. Serve hot or let it cool and refrigerate, then it can be served cold.

Warm Up with Turkey and Noodles

The original recipe for this is in a great freezer cook book, it gives you the number of meals you can make and the different measurements for the ingredients for how many meals you are preparing. I have changed it a bit to make it more of my own.

Ingredients
  • 1 Gallon Vegetable Broth
  • 2 tsp Chicken Bullion Powder
  • 1/2 tsp salt
  • 1/2 C diced onion (Fresh, Frozen or Dried all work!)
  • 1/2 tsp pepper
  • 1/2 tsp Montreal Chicken Seasoning
  • 1 lb Egg Noodles or Rotini
  • 1/3 C Flour
  • 2 C Milk
  • 3 C Shredded or Diced Turkey
  • salt to taste
Instructions
  1. In Large Pot, heat broth, seasonings and onion to boiling. (Emphasis on Large Pot.. too many times I have used one that was way too small)
  2. Add noodles and bring again to boiling. Reduce heat to keep it boiling but not boiling over. Cook for 3-4 minutes.
  3. Wisk flour and milk together and add to bubbling pot. Add meat, and cook everything until the juices are slightly reduced.
  4. Eat and Enjoy! This is a great comfort food meal for cold days (although I’m eating it on a warm day!). It could be easily adjusted to add more diced vegetables too!

I love cornbread, but I seem to be the only one in my family that eats them as leftovers. I finally was smarter than usual and started making corn bread muffins so that I had an easy way to freeze the leftovers. They are perfect to pull one or two out of the freezer and defrost them just for me.

Ingredients
  • 1 Cup Flour
  • 3/4 Cup Cornmeal
  • 2 to 3 Tablespoons Sugar
  • 2 1/2 teaspoons Baking Powder
  • 3/4 teaspoon Salk
  • Cooking Spray or Paper Liners
  • 2 Eggs
  • 1 Cup Milk
  • 1/4 Cup Cooking Oil
Instructions
  1. Preheat oven to 400°F.
  2. Stir together flour, cornmeal, sugar, baking powder and salt.
  3. In a separate bowl stir together eggs, milk and oil. Add liquids to flour mixture and stir until moistened.
  4. Spray muffin tins very generously with cooking spray if not using paper liners. Fill the muffin trays about 3/4 full with cornbread batter.
  5. Bake for 10-15 minutes until they are slightly darker color or until a toothpick comes out clean.

My cookbook has the note to double this recipe- a great idea when you have room in the freezer. These go well with a little bit of butter and honey, or crumbled up in some chili!
