My husband came up with Chili Cheese Dog Casserole a couple years ago but when I made it for him just recently he had forgotten all about it! This is my favorite easy dinner to make after making a huge batch of chili– it seems new and different but it’s a great way to use the leftovers. If you don’t have leftover chili, canned chili works well too!
15 Minute Supper: Chili Cheese Dog Casserole
4 Cups Chili
3 Cups Hash browns
3 Hot Dogs (Sliced)
1 Cup Cheddar Cheese
First cook the hashbrowns and sliced hot dogs.
Set 1/2 Cup Cheese to the side, and mix all of the other ingredients together in a pot on the stove, until the cheese is melted and everything is warm.
Top each serving with the cheese you set aside in the beginning.
When I made this the last time I left out the hot dogs because I made our Sausage Link Chili– and the sausage was too much like hot dogs so they didn’t need to be added.

Sometimes when I go grocery shopping I have alot of ambition. Today was one of those days. I bought alot of stuff that needs to be cooked and prepared, and lately I haven’t had the energy to cook and prepare anything.
I did come home and get things ready for a few of my husband’s lunches. I put all of his snacks into bags, and tied them with bright pink ribbon for Valentine’s Day! Hopefully he doesn’t have to eat lunch in front of his co-workers any time soon!
I also quickly put together some homemade lunchables. I almost bought lunchables because I was craving them, and I was thinking they would be a good idea for my husband’s lunch but I also thought about how I would eat 3 or more of them.
These lunchables took almost no time at all to put together, and they are bigger portions than store bought lunchables. They are small still and really would only be a snack, but these plus the other snacks I put in his lunch is enough to tide him over until dinner time.
Thick Lunch Meat
Plastic to wrap meat in
Slice the lunch meat into cracker size portions. Wrap it in plastic wrap to keep the moisture from ruining the crackers.
Add the plastic wrapped lunch meat to the plastic bag along with a couple slices of cheese and half a sleeve of crackers.
I wish I could remember where I got the idea for making Turkey Broccoli and Rice. I know I started making it when my husband and I first got together- it might have been one of those times I just found random ingredients in the pantry and put it all together. It’s something that we make on a regular basis because it’s so easy and filling. Not to mention tasty!
We love to make this with either leftover Chicken or Turkey (I usually freeze them 1 Cup portions) or canned chicken or sometimes we will cook a chicken breast on “the George” while the rice is cooking. During this next month or so I’m sure we will be making it with leftover Turkey from Thanksgiving! (See Also: 12+ Dinner Ideas from Leftover Turkey)
15 Minute Supper: Cheesy Turkey and Rice
Recipe Type: Dinner
1 Cup Rice
3 Cup Water
3/4 Cup Frozen Broccoli
1/2 Tablespoon Montreal Steak Seasoning
3/4 Cup Cooked Chicken or Turkey
1 Can Cream of Chicken (or other “cream of”)
1/2 Cup Shredded Cheddar Cheese (plus extra to add on top, if desired)
Add the rice, water, broccoli, and seasoning to a pot, heat on high until boiling, then reduce heat to medium. When the water is semi-reduced add the cream of chicken, cooked chicken and cheese. Mix everything in and let the rice continue cooking for the full 15 minutes.
