15 Minute Supper: Burrito Mix with Gourmet Gardens Giveaway

First of all, I want to give a shout-out to our Sponsor, Gourmet Gardens. They sent me some awesome fresh spices tubes to use in this dinner. To all of my friends: I can’t believe you never told me this type of product existed! I am so thrilled to have the chance to try out the different types of spices that Gourmet Gardens offers. I thought that my only two options for spices were fresh or dried. I’m so excited to have a way to eat fresher food but still have the convenience of being able to easily pull these out of the fridge or the freezer. See Gourmet Garden’s full line of Herbs and Spices here.

15 Minute Burrito Mix with Gourmet Garden Spices #15MinuteSuppers

There are four main things that go in our Burrito Mix: Beans, Rice, Chicken, and Salsa. We also use cheese as a topping.

Beans and Salsa

Beans and Salsa are usually the easiest parts of our burrito mix. I use canned beans, usually Great Northern Beans or Pinto Beans. I used to have to kind of smash the beans up so that my husband would eat them, but luckily after a few years of eating this he is used to eating beans now.

Usually I use store bought salsa, but I didn’t know that we were out of it until I had already started everything else- so this time I made my own salsa as well. If you are quick with chopping it could be done in the 15 Minutes as well. It took me quite a bit longer because of my little helper in the background.

#15MinuteSuppersMy salsa doesn’t look the prettiest, and I’m not even going to give you a recipe because it was mostly just stuff I happened to have around the house- tomatoes, frozen peppers, frozen onions, as well as the spices from Gourmet Garden- Cilantro and Chili Pepper. I chopped and threw all of that together and blended it in the blender. We used approximately one cup of salsa for the burrito mix.

Chicken

#15MinuteSuppersThe chicken is another pretty easy ingredient- leftovers from earlier in the week. We had grilled chicken with Montreal Steak Seasoning earlier in the week, and it went perfectly with the rest of the burrito mix.

I used about one chicken breast and shredded it in the blender- it took approximately 10-15 seconds. More chicken is always better in our house though!

Rice

Cilantro Rice #15MinuteSuppersThe rice is the most time consuming so be sure to start making it first. The rice itself is very tasty and would be a great side dish to any type of Mexican food or otherwise! I used the Gourmet Gardens Lemon Grass and Cilantro this time- it turned out amazing and reminded me of Chipotle’s Rice that I have been craving.

Rice to add to the Amazing Burrito Mix
Recipe Type: 15MinuteSuppers
Cuisine: Mexican
Author: Monica
Cook time:
Total time:
Serves: 4
Ingredients
  • 1 Cup Dry Rice
  • 2 1/3 Cups Water
  • 2 Tablespoons Olive Oil
  • 1/2 teaspoon Taco Seasoning
  • 1/2 teaspoon Gourmet Gardens Lemon Grass
  • 1/2 teaspoon Gourmet Gardens Cilantro
Instructions
  1. Add the rice, water, olive oil, taco seasoning and Lemon Grass to a small pot. Heat on high until boiling. Reduce heat to medium, so that it is still boiling.
  2. When there is hardly any water left, add the Cilantro and let the rice continue cooking for a minute or two. Now the rice should be ready to add to the rest of the burrito mix. (Or dished up as a side dish to something else)

Mixing the Burrito Mix

Once everything is ready, all that needs to be done is to mix the burrito mix together. We prefer a mix, because it makes for easy lunches for the next couple of days and it tastes so much better to have everything mixed in.

Burrito Mix in a too-small bowl #15MinuteSuppersSo I’ve already mentioned it above, but we use 1 can of beans, 1 cup of mild salsa, 3(ish) cups of rice and 3(ish) cups of shredded chicken. You can work with the sizes of everything depending on what you have around the house and what your family likes too!Yummy 15 Minute Burrito Mix Recipe #15MinuteSuppers

I have been meaning to get a bowl back from a neighbor- but I tried putting everything in a smaller one. Needless to say, it didn’t work. I just wanted to explain why the burrito mix was put into a Christmas bowl for awhile.

15 Minute Burrito Mix #15MinuteSuppers

After everything is mixed, it can be dished onto a tortilla. We then will sprinkle cheese on top, and sometimes add more salsa. If you need to melt the cheese or heat up the burrito make sure to heat it up before folding it.

How to Fold a Burrito #15MinuteSuppers

That’s it! All of this can be done in 15 minutes and you will have a delicious dinner for your family! Everyone in my family loves this dinner- especially my two year old son (as long as he doesn’t eat all of the ingredients before they are put together- he must have drank a 1/2 Cup of Salsa this time!).

The Creamiest Tuna Noodle Casserole Recipe

15 Minute Supper: Chili Cheese Dog Casserole

Chili Cheese Dog Casserole #15MinuteSuppers

My husband came up with Chili Cheese Dog Casserole a couple years ago but when I made it for him just recently he had forgotten all about it! This is my favorite easy dinner to make after making a huge batch of chili– it seems new and different but it’s a great way to use the leftovers. If you don’t have leftover chili, canned chili works well too!

Author: Monica
Cook time:
Total time:
Serves: 4
Ingredients
  • 4 Cups Chili
  • 3 Cups Hash browns
  • 3 Hot Dogs (Sliced)
  • 1 Cup Cheddar Cheese
Instructions
  1. First cook the hashbrowns and sliced hot dogs.
  2. Set 1/2 Cup Cheese to the side, and mix all of the other ingredients together in a pot on the stove, until the cheese is melted and everything is warm.
  3. Top each serving with the cheese you set aside in the beginning.

When I made this the last time I left out the hot dogs because I made our Sausage Link Chili– and the sausage was too much like hot dogs so they didn’t need to be added.

Green Chile Chicken Soup

Slow Cooked Green Chile Chicken Soup

This Green Chile Chicken Soup is so delicious you will be licking your bowl clean- literally! Calling it a soup is a new thing for us though- we got the recipe from our friend and we have always called it “Green Chile Chicken Stuff” and we would either eat it in a tortilla like a burrito or out of a bowl as a soup. I like eating it as a soup the best, sometimes I would even dip tortillas in it as well.

Chicken Ranch Lunch Wraps

Homemade Chicken Ranch Snack Wraps

My husband loves eating snack wraps from a certain fast food place, but oftentimes they are small and two of them is just a snack- and a pricey snack at that! Sometimes I make him homemade snack wraps but I don’t like to call them snack wraps, because mine are bigger and much more filling! Instead, we call them Chicken Ranch Lunch Wraps.

Prep time:
Total time:
Serves: 1
Ingredients
  • Tortilla
  • Ranch Dressing
  • Lettuce
  • Chicken Nuggets or Breaded Chicken Patties (Cooked and Cooled)
  • Shredded Cheese
Instructions
  1. Put a large spoonful of ranch on the tortilla, spread it around so that every bite will have some ranch in it.
  2. Lay out your lettuce so that it covers the ranch, and lay the chicken down.
  3. Sprinkle with cheese, then wrap. Hold wrap together with a toothpick if needed.

Chicken Snack Wraps

A couple of these snack wraps make a great lunch- it’s tasty enough that my husband won’t go out and buy something instead! If I can make him great lunches at home it saves us alot of money on going out to eat, plus it’s a tiny bit healthier than what you would buy at a restaurant.

Homemade Lunchables

Sometimes when I go grocery shopping I have alot of ambition. Today was one of those days. I bought alot of stuff that needs to be cooked and prepared, and lately I haven’t had the energy to cook and prepare anything.

I did come home and get things ready for a few of my husband’s lunches. I put all of his snacks into bags, and tied them with bright pink ribbon for Valentine’s Day! Hopefully he doesn’t have to eat lunch in front of his co-workers any time soon!

I also quickly put together some homemade lunchables. I almost bought lunchables because I was craving them, and I was thinking they would be a good idea for my husband’s lunch but I also thought about how I would eat 3 or more of them.

These lunchables took almost no time at all to put together, and they are bigger portions than store bought lunchables. They are small still and really would only be a snack, but these plus the other snacks I put in his lunch is enough to tide him over until dinner time.

Materials:
Thick Lunch Meat
Crackers
Sliced Cheese
Plastic to wrap meat in
Ziplock Bags

Directions:
Slice the lunch meat into cracker size portions. Wrap it in plastic wrap to keep the moisture from ruining the crackers.

Add the plastic wrapped lunch meat to the plastic bag along with a couple slices of cheese and half a sleeve of crackers.

4 Make Ahead Breakfast Ideas for Future Busy Days

4 Make Ahead Breakfast Ideas for Future Busy Days

When I’m not feeling sickly for months at a time (stupid morning sickness!) I try to make breakfast on the weekend atleast a couple times a month. On days where I have a little extra time I make a big breakfast with plenty of leftovers that I can freeze for later. This has been a huge help now that I don’t feel like doing anything, other than the fact that we are running out of almost everything!

Muffins

Strawberry Muffins

I love freezing muffins because no one in my house really appreciates muffins as much as I do and if I freeze them they won’t go to waste!

Freezing Method: Just put them in a Zip-Lock bag and Freeze!

Reheating Method: Microwave for about 30 Seconds each

Breakfast Burritos

Breakfast Burritos

We love making breakfast burritos, but we are stuck just making our favorite- Bacon, Egg and Cheese. My grandfather is the king of breakfast burritos, he makes a mix of ‘breakfast burrito stuff’ and eats it for breakfast everyday for days on end. His burritos are different every time, he uses whatever ingredients he has on hand. One of his main ingredients is potato chunks.

Freezing Method: Lay finished burritos on a cookie sheet or flat surface and freeze for an hour or two. After that time transfer the burritos to a Ziplock bag.

Reheating Method: Microwave for 2-3 minutes, until heated throughly

Our Breakfast Burrito Recipe:

Prep time:
Total time:
Serves: 10
Ingredients
  • Package of Bacon
  • Dozen Eggs
  • 10 Burrito Size Tortillas
  • Cheese
Instructions
  1. Cook the bacon and Scramble the Eggs. Season the eggs to taste while cooking. Crumble bacon into small pieces and mix with eggs. Set Eggs and Bacon aside.
  2. Cook tortillas on the pan that the bacon was cooked in, just for 30 seconds-1 minute on each side.
  3. Put a few spoonfuls of egg and bacon mix into the center of the tortilla and sprinkle a generous amount of cheese on top.
  4. Fold the burrito closed, and enjoy!

Pancakes

Pancakes with Apple Topping

We love pancakes here. Not only are they super easy to make, it is easy to make a huge batch (especially if you have a huge skillet) and be able to eat them whenever you want afterwards!

Freezing Method: Lay flat for 30 minutes in the freezer, then transfer to a ziplock bag. Refrigerate extras until you have time to freeze all of the pancakes.

Reheating Method: Microwave for 30 seconds for each pancake.

Hot Pockets

Blackberry Hot Pockets on Arizona Mama

I love making hot pockets, but I also take the time to make my own dough. Making the dough is super time consuming so I don’t make these very often. If you buy premade cresent rolls dough or puff pastry it can be a really easy breakfast to make and freeze for later. My husband loves eating these because they don’t take long in the microwave and taste delicious. There are better instructions on my Berry Recipes post- go check that out for the full details. What I didn’t list over there (because I just did berry ones that time) was the many other combinations of what we put in them.

Strawberry Valentine's Day Muffins

When I was about 12, I found this Valentine’s Day Muffin recipe in a Family Fun magazine. It’s now available on Spoonful instead. It became a Valentine’s Day Tradition to make these muffins, we called them Sealed With A Kiss Muffins. Lately I haven’t called them that because instead of using Chocolate kisses I use whatever chocolate I have around- this year it was “Gold Doubloons” as my son calls them- the gold coin chocolates that we received from someone for the holidays.

  6. Bake muffins for 20-25 minutes, use a toothpick to test them (just be sure not to put it in the chocolate). The toothpick should come out clean.

We love these muffins- but they are a treat that only happens once a year, so it makes them a bit more special!

15 Minute Supper: Classic Chicken a la King

This recipe originally came from my favorite cookbook (aka: the bible) but in more recent editions the recipe hasn’t been included. I found this out after frantically calling my mom and comparing page numbers at the last minute one night before finishing up dinner as a newlywed. Since then I have countless scraps of paper reminding me of the recipe and I have come up with a few additions to our Chicken a la King recipe that add a bit more flavor.
